A Delicious and Tangy Kadhi Recipe: A Taste of Indian Comfort Food

Ingredients:

- 1 cup yogurt (preferably sour)

- 3 tablespoons besan (gram flour)

- 2 cups water

- 1 tablespoon oil

- 1 teaspoon cumin seeds

- 1 teaspoon mustard seeds

- 2-3 dried red chilies

- 1 onion, finely chopped

- 2-3 garlic cloves, minced

- 1-inch piece of ginger, grated

- 1 green chili, slit lengthwise (optional)

- A pinch of asafoetida (hing)

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust according to taste)

- 1 teaspoon coriander powder

- Salt to taste

- Fresh coriander leaves for garnish

Instructions:

1. In a mixing bowl, whisk the yogurt until smooth. Add besan (gram flour) and water to the yogurt and whisk again until no lumps remain. Set aside.

2. Heat oil in a deep pan or kadhai over medium heat. Add cumin seeds, mustard seeds, and dried red chilies. Let them sizzle and splutter for a few seconds.

3. finely chopped onions and sauté until they turn translucent and lightly golden.

4. Add minced garlic, grated ginger, and slit green chili (if using). Sauté for a minute until the raw aroma of ginger and garlic fades away.

5. Reduce the heat to low and add asafoetida, turmeric powder, red chili powder, and coriander powder.  well to combine the spices with the onion-ginger-garlic mixture.

6. Pour the yogurt and besan mixture into the pan slowly, stirring continuously to prevent any lumps from forming.

7. salt to taste and adjust the consistency by adding more water if needed. Keep stirring occasionally to avoid the kadhi from sticking to the bottom of the pan.

8. Let the kadhi simmer on low heat for about 20-25 minutes until it thickens slightly and the raw flavor of besan disappears.

9. While the kadhi is cooking, you can prepare the tempering (tadka). Heat a small pan and add a teaspoon of oil. Add cumin seeds and dried red chilies. Once the seeds crackle and the chilies turn dark, pour the tempering over the kadhi.

10. Garnish with fresh coriander leaves and serve the kadhi hot with steamed rice or rotis.
